Blind Owl Brewery

Blind Owl Brewery is now open and serving mighty fine beer and food off Binford Blvd. & 62nd St. in Indianapolis, IN. Stop in and try Blind Owl's brews for football season! Their outdoor area is one of the best in town complete with bocce ball, cornhole and a garden.

Blind Owl's beers will only be available to drink at Blind Owl as well as a few of R.P. Lux's other restaurants around the Indianapolis area (e.g. The Elbow Room, Broad Ripple Tavern, Nickel Plate, Binkley's and The Meridian).

C&T Design Indy's Larry Simonel and Deven Kaufman partnered with Blind Owl on this project.

Pie Five Named a Top Mover & Shaker

Pie Five Pizza, a chain based out of Dallas, Texas, was started five years ago by the same folks who started Pizza Inn. C&T Design Branch Manager Mark Mattevi has been working with them since their inception. They have been routinely - and rightly so! - acknowledged by various industry publications and organizations for their innovation and subsequent booming success. Their unique concept, hardwork and good food has provided them with the ability to create demand for their product while rapidly expanding at a sustainable rate.

Their most recent nod came from FastCasual.com, a website dedicated to exactly the type of foodservice establishments you would imagine as indicated by the website's name. Pive Five Pizza was number 3 on their list of the 2015 Top 100 Movers & Shakers! This is a move up ten spots from last year when they came in at number 13, and up from slot 40 the year before that! These are incredible jumps in a very short amount of time.

A huge congratulations to Pie Five Pizza!! We are so proud to be a partner.

Deven Kaufman Named SEFA's May Featured Pro

A huge congratulations goes out to Deven Kaufman of the C&T Design Indianapolis office! It was announced on May 1st that he had been nominated and selected as the SEFA Featured Pro for the month of May. As explained by SEFA, a Featured SEFAPro is someone who has been nominated by principals, suppliers, and/or SEFA for their professionalism, representation of their company, relationships established, leadership, product knowledge, sales skills, and advancement in the SEFAPro training program.

Deven has been with C&T Design for five years, spending most of that time in project management under the tutelage of Chris Monico, a great mentor with more than 15 years of experience in the foodservice industry.

Energy Savings in the Kitchen

Foodservice equipment and the costs associated with its operation can be expensive.. really expensive! The kitchen, in the vast majority of commercial buildings, is the largest contributor to pricy utility bills. From reducing energy and equipment costs to reducing overall energy usage, there are many ways to cut these costs

Rebates reduce equipment costs on the front end of a new purchase. Whether you are buying a new piece of equipment that is more energy-efficient than an alternative or are replacing a piece of equipment with a more energy-efficient piece of equipment, rebates offered by utility companies can make the new purchase more affordable. The rebate process can be time-consuming and frustrating in both the front-end selection and the back-end application part of the process. As a utility company trade-ally, we are on top of the ever-changing rebate programs available from each and are well-versed in the entire process relating to foodservice equipment.

Reducing energy usage is another way to cut costs. Rebate-eligible equipment typically brings long-term energy savings to your operation. The energy savings provided through this new piece of equipment oftentimes justifies the cost of the equipment in a shorter period of time than most assume. (The rebate is the icing on the cake.) Behavioral changes can also make a huge difference in your energy usage resulting in a positive impact on your operation's energy costs. An energy audit will determine what may be done to save the most energy

You might be asking yourself why energy companies offer rebates on Energy Star rated equipment.. we found ourselves asking the same question.. This question has a somewhat complicated answer, but the long and short of it is that these rebate dollars are available to affect energy usage positively and cut usage. An obvious solution to this problem is getting more energy efficient equipment in commercial facilities.

Combining all of these methods, based on your particular operation and needs, there is huge potential to save money. The reduction part of the old adage "Reduce, Reuse, Recycle" happens to be a passion of ours here at C&T Design. Let us be a part of your effort to go green

Edible Indy Spring 2015 Issue Out NowEdible Indy's Spring 2015 Feeding Our Community issue is hot off the press. Covering all things good that Indiana communities do to ensure that people do not go without, we here at C&T Design felt that it was the perfect time to start partnering with Edible Indy as this particular subject matter is near and dear to our hearts. Featured in the ad we placed in this issue (as pictured below) are The Chef's Academy and Second Helpings - two amazing entities that are dedicated to giving back to the Indianapolis community everyday. We are proud to be able to say that we have partnered with them in the past and are excited to partner with them in the near future. Keep an eye out for us in the next Edible Indy issue.
