As part of this project, C&T provided the kitchen and bar designs, specified, procured and installed the necessary food service equipment, and managed the project. Due to the great deal of outdoor space at the location, the bar also needed to be designed to accommodate both the indoor and outdoor sections. The client of this project also wanted their fermentation tanks on display, which required several additional columns to be built in the kitchen in order to support both the weight of the tanks and the overhead equipment. This presented a challenge in the laying out of the equipment for the microbrewery’s operation; the kitchen already had minimal space dedicated to it due to the large amount of space that was necessary to operate the brewery.
